Cauliflower soup

Making cauliflower into a soup is, in my opinion, one of the easiest and simplest ways to consume cauliflower.


0.5-1 cauliflower head
1 litre vegetable stock
A pinch of salt
A pinch of nutmeg
Cream (dairy or plant based)


Cut cauliflower into florets. Add it to the pot together with vegetable stock.

Bring it to the boil and then simmer till cauliflower is soft throughout, around 10-15 minutes.

Blend it till smooth, add some cream. Adjust seasoning and sprinkle some nutmeg.
