My mum’s curd bake. I have never liked it that much as a child, just didn’t like the flavour and texture of curd. In fact, I wasn’t that much into dairy except for kefir. But nowadays I’m rediscovering some of the foods I’ve grown up with in search of simple and comforting flavours. This curd bake is what it sounds like -90% curd ( milk that has curdled), eggs, semolina, sugar, a bit of vanilla. You mix them all and bake in the oven for 30-40 minutes. It’s tasty warm or cold and it’s terrific with some strawberry or plum jam.

We’d normally have it for dinner (lunch is the main meal of the day in Lithuania) but it could be had as a dessert.

Roast courgettes whole, cool them and squeeze water out, blend them with garlic, tahini and lemon juice. Season, mix in yogurt, and drizzle some olive oil, sprinkle some fresh mint. Yummy!

Back to Wales, back to the laverbread cakes. I can’t really remember why laverbread cakes aren’t part of my routine food, because it’s so easy and quick to make and it’s a local traditional food. I feel like laverbread has to have a comeback to Welsh food scene as it is such as tasty and nourishing local food.

An old fashioned ‘valgykla’ or ‘eatery’ in English if you use a direct translation. It is a canteen with home-cooked style food that is super cheap and is the only surviving place ( that I’m aware of) in my hometown Kaunas. You can see the prices in one of the photos in euros. Thankfully the interior hasn’t changed much too, and is a proof of how things if left unchanged will be valuable and even stylish in the future.

This time I’ve noticed that Lithuanian food scene has shifted a bit away from home - made style food towards serving more burgers, and pizzas which saddens me a little bit. That’s one thing I really enjoyed about eating out in Lithuania. I wonder if the cooking skills are being lost too 🙁

Summer veg soup topped with fresh herbs. The recipe was inspired by a couple of other summer soups I’ve seen. The foundation is made of veg stock cooked as recommended in ‘The Nordic cookbook’ by Magnus Nilsson. Cooking veg till it’s cooked and no longer, so the stock tastes fresh and flavours are distinguishable. It takes around 20 mins to make so it’s super quick which is great for making it for all sorts of dishes. The veg stock can be improvised with things at hand, I’ve added pea pods to have some pea flavour. And of course adding fresh herbs to your soup bowl takes it to another level.
